Can Maple Syrup Go Bad?

Yes, maple syrup can go bad, but it is naturally resistant to spoilage.

Its high sugar concentration and low water activity make it difficult for many microorganisms to grow. Properly sealed maple syrup can remain stable for a long time, but once opened, it should be refrigerated. Mold, fermentation, unusual pressure and abnormal smells are signs that maple syrup should be discarded.

The main reason is its high sugar content and low available water. During maple syrup production, water is removed from maple sap until the finished syrup contains about 66–68.9% soluble solids. Most of these solids are sugars. The high sugar level makes it difficult for many bacteria, yeasts and molds to grow.

This is known as water activity. It describes how much water is available for microorganisms to use. Maple syrup has relatively low water activity, which helps it remain stable for a long time. However, some microorganisms can still grow in maple syrup under the right conditions

Does maple syrup expire?

Not necessarily. Age alone does not mean maple syrup has gone bad.

A properly sealed, unopened container that has been stored correctly may remain in good condition for a long time. A best-before date is mainly about freshness and quality, not an automatic indication that the food becomes unsafe on that date.

Once maple syrup is opened, storage becomes more important. Refrigeration helps slow mold growth and preserve the syrup.

How can you tell if maple syrup has gone bad?

Do not judge maple syrup by its age alone. Check several things:

Look at it: Maple syrup should not have visible mold. Sugar crystals are different from mold and do not automatically mean the syrup is spoiled.

Smell it: Normal maple syrup should have a pleasant maple aroma. A sour, alcoholic or fermented smell can indicate spoilage.

Check for fermentation: Unusual pressure, gas or a fermented smell may indicate that microorganisms are growing in the syrup.

Look for mold: Visible mold is a clear reason to discard maple syrup.

Importantly, do not simply scrape mold off maple syrup and boil it again. Food-safety guidance recommends discarding maple syrup with mold because some molds can produce toxins that may not be destroyed by heating.

What can you do with old maple syrup?

If maple syrup is old but has no mold, unusual smell or signs of fermentation, it may still be suitable for use.

Older syrup can be used in:

• Pancakes and waffles

• Baking

• Granola and oatmeal

• Sauces and glazes

• Marinades

• Salad dressings

• Roasted vegetables

• Desserts

The important distinction is old versus spoiled. Old syrup may still be perfectly usable. Spoiled syrup should be discarded.

How should maple syrup be stored?

Keep unopened maple syrup according to the producer's storage instructions.

After opening:

Seal it tightly and refrigerate it.

Refrigeration helps slow mold growth and extends the useful life of the syrup. Keeping the container clean and closed also reduces exposure to contaminants.

What is the key to a long shelf life?

Maple syrup lasts a long time because its high sugar concentration and low water activity make it difficult for many microorganisms to grow. Proper processing and packaging provide additional protection.

Maple syrup is not immune to spoilage. Old does not necessarily mean bad. Mold, fermentation, unusual pressure and abnormal smells are much more important warning signs than age alone.

So the traditional belief that “maple syrup doesn't go bad” has a scientific basis, but the more accurate statement is: Maple syrup doesn't spoil easily, but it can spoil.
