The team has already determined that neither the method with which the syrup is produced(evaporationvs. reverse osmosis) nor the grade of the syrup (light vs. amber) havesignificant effect on the anti-oxidant properties of the resulting maple product. Calorie-saving It will also thrill you to know that maple syrup and maple sugar contain less calories than other traditional sweeteners. For example, compare 100 g of white sugar at 396 calories to 100 g of maple syrup at 252 calories. That's a 36% savings in calories! By substituting the 1 teaspoon of white sugar in your coffee or tea with 1 teaspoon of maple sugar, you will save 5 calories!
